Moroccan Lentil Salad

Ingredients

  • 3 tablespoons olive oil
  • 1 each red onion chopped
  • 1 each tomato chopped
  • 6 ounces lentils cooked
  • 4 cloves garlic chopped
  • 1 bunch cilantro chopped
  • 2 teaspoons turmeric
  • 2 teaspoons cumin
  • 1 each lime

Instructions

  • Pre cook lentils, drain, cool and reserve.
  • Saute red onions in warm olive oil until translucent.
  • Add garlic, turmeric and cumin.
  • Mix lentils, onions and rest of ingredients together.
  • Add cilantro and lime juice. Serve.
