Caprese Quiche

An easy Italian-inspired quiche with tomatoes, basil, mozzarella and Parmesan that is bursting with flavor!

  • Baking tray (cupcakes)
  • Parchment paper to roll out the dough
  • Rolling Pin
  • Mixing bowl
  • Whisk
  • Cutting Board and knife


  • 1 9" pie crust
  • 1 cup mozzarella cheese shredded
  • ½ pint cherry tomatoes sliced in half
  • 6 large eggs
  • ½ cup heavy cream
  • ½ tsp Himalayan salt
  • ¼ tsp black pepper
  • ¼ cup basil for topping, if desired


  • Preheat your oven to 350 degrees F.  Form a pie shell in a pie dish that has been sprayed with cooking spray
  • Spread cheese on the bottom of the pie crust, then evenly arrange tomatoes over the cheese
  • In a medium bowl, whisk together eggs, heavy cream, salt, and pepper until combined.  Gently stir in basil
  • Evenly pour egg mixture over cheese and tomatoes
  • Bake for 40 minutes, or until eggs are set and crust is golden brown
  • Top with fresh basil
