An easy Italian-inspired quiche with tomatoes, basil, mozzarella and Parmesan that is bursting with flavor!

Instructions
Preheat your oven to 350 degrees F. Form a pie shell in a pie dish that has been sprayed with cooking spray
Spread cheese on the bottom of the pie crust, then evenly arrange tomatoes over the cheese
In a medium bowl, whisk together eggs, heavy cream, salt, and pepper until combined. Gently stir in basil
Evenly pour egg mixture over cheese and tomatoes
Bake for 40 minutes, or until eggs are set and crust is golden brown
Top with fresh basil
