This easy and delicious egg and vegetables frittata recipe is a perfect dish to serve for brunch in addition to the rest of goodies, like waffles or pancakes. If you have kids, you can involve them into the making as we know how much they love to crack eggs!
Vegetable Frittata
A very easy recipe to make a vegetable and egg frittata.

4-6 tablespoons olive oil 2 cups vegetables (broccoli, mushrooms, peppers) 1/2 onion diced 1 clove garlic minced 6 eggs 1/2 cup cheese optional- cheese of your choice
Preheat oven to 400 degrees.
Meanwhile in a oven-safe pan, saute the onion and garlic in a tablespoon of olive oil over medium heat.
After about 3 minutes add the remaining oil and your choice of vegetables.
Saute the vegetables over medium heat for about 5 minutes.
Season the vegetables with salt and herbs (oregano & paprika).
Whisk the eggs together then pour the eggs over the vegetables, making sure they spread evenly over the veggies.
Add the cheese if using any.
Now place the saute pan in the oven and bake for 8-10 minutes or you can continue to cook over the stove on medium low for 15-20 minutes.
NOTE: You can use a cupcake pan to make individual servings.
