This is one of those recipes that can be made in no time. We love the crustiness/nuttiness of this recipe and the fact that it goes so well with Salmon! Take advantage of the health benefits of this recipe; Omega 3's on the Salmon which are  known to lower the bad cholesterol and the vast array of vitamins and minerals in the Pistachios make this another healthy, happy heart recipe!

Pistachio-Crusted Salmon

Ingredients

  • 5 tablespoons panko
  • 5 tablespoons pistachios finely chopped dry-roasted
  • 1 each egg whites
  • 4 6 oz fillets Salmon fillets 6-ounce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 4 each Lemon wedges

Instructions

  • Preheat oven to 450°.
  • Combine Panko, Pistachios and Egg whites in a shallow dish. Sprinkle fillets evenly with salt and pepper. Top the fillets in breadcrumb/pistachio mixture.
  • Place Salmon fillets on baking sheet and bake at 450° for 12 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Keep an eye on them- the Pistachios can burn easily!
  • Garnish with lemon wedges.

Notes

Reduce 1/2 cup of white wine and add a touch of cream to make a light sauce for this dish.
