Combine Panko, Pistachios and Egg whites in a shallow dish. Sprinkle fillets evenly with salt and pepper. Top the fillets in breadcrumb/pistachio mixture.
Place Salmon fillets on baking sheet and bake at 450° for 12 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Keep an eye on them- the Pistachios can burn easily!
Garnish with lemon wedges.
Notes
Reduce 1/2 cup of white wine and add a touch of cream to make a light sauce for this dish.
