Healthy Chocolate Monkey Bread

A twist on a favorite, this healthy alternative bakes up in muffin shape for even easier sharing.

Equipment

  • Cupcake or Muffin tray
  • 2 Bowls for mixing
  • Whisk
  • Rubber Spatula

Ingredients

  • 3 medium bananas
  • ½ cup Medjool dates pitted and chopped into small pieces
  • 2 eggs
  • 1 cup Greek yogurt
  • ½ cup milk
  • ½ cup honey
  • 1 tsp vanilla extract
  • cup flour
  • ½ cup cocoa powder
  • tsp baking soda
  • ½ tsp salt
  • cup chocolate chips

Instructions

  • Preheat oven to 350 degrees and grease baking muffin tin.
  • In a large bowl, add bananas and chopped dates and mash well.  Add eggs, Greek yogurt, milk, honey, and vanilla. Stir well.
  • In a separate bowl whisk together flour, cocoa powder, baking soda, and salt.
  • Add dry ingredients and chocolate chips to the wet mixture; stir just until combined. Avoid over mixing.
  • Pour batter into the muffin tray to 3/4 full
  • Bake for 20 minutes at 350 degrees.
