The Perfect Cheese Omelette
The perfect cheese omelette doesn't require a lot of ingredients, but packs a big flavorful punch.

- 4 large Eggs
- 1 tsp Salted butter (plus melted butter for brushing the finished omelette)
- 3 tbsp Cheddar, Monterey Jack (or other cheese of your choice)
- 1 cup Chopped veggies (optional)
Beat eggs and salt and pepper with a fork in a small bowl until thoroughly combined.
Heat butter in a 10-inch nonstick skillet over medium-high heat; when foaming subsides and butter just begins to color, pour in eggs.
Cook until edges begin to set, 2 to 3 seconds, then, with a rubber spatula, stir in a circular motion until slightly thickened, about 10 seconds.
Sprinkle cheese down the center of the omelet, fold over.
If using veggies, cook them with 1 tbsp of grapeseed oil and add them to the eggs when you add the cheese.
