Enough with feeding your kids or yourself with store-bought cookies! If you look at the label,  you can find many ingredients that are not necessarily what you want them to have(or that you might not even recognize!) Here is the solution:  Dates, sun butter, oats and fruit preserves come together to form a most delish raw cookie with REAL ingredients. Kids and adults will absolutely come for seconds on this one. If you are a chocolate lover, you can add about 2 teaspoons of cocoa to the mix. Don't forget to top them with fresh berries such as raspberries. What's best is that you are skipping on the enriched processed flour, the added sugar, preservatives, artificial coloring and other fake ingredients that have little or no nutrition and that you want to avoid at all cost!

Ingredients

  • 8 each dates large pitted
  • 3 cups rolled oats
  • 1 cup sunflower butter, smooth
  • 1/2 cup coconut shredded unsweetened, optional
  • 1 each orange zest and juiced
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoon honey
  • 1/4 teaspoon sea salt
  • 1/2 cup fruit preserves strawberry, 100 %

Instructions

  • Put dates into a medium bowl, cover with hot water and set aside to let soak for 10 to 15 minutes. Reserve 1/2 cup of the soaking liquid, and then drain dates well.
  • In a food processor, pulse oats until coarsely ground; transfer to a large bowl and set aside.
  • Transfer dates and reserved 1/2 cup soaking liquid to food processor and purée until smooth.
  • Add date mixture, sunflower butter, coconut, orange zest, honey and juice, cinnamon and salt to bowl with oats and knead together to make a dough.
  • Roll dough into 24 balls, transferring them to a parchment paper-lined sheet tray as done.
  • Make an indentation in the middle of each cookie by pressing down with your thumb.
  • Spoon a tiny-bit of fruit preserves into each indentation and place a raspberry or a blackberry on top, chill or eat them at room temperature.
