Gluten Free Cranberries and Chocolate Chip Cookies

Ingredients

  • 1 1/2 cup chickpea flour
  • 1 cup oat flour See below how to make at flour
  • 3/4 cup chocolate chip cookies
  • 1/2 cup cranberries dry
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/4 cup sugar organic
  • 1/4 cup grapeseed oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla

Instructions

  • Preheat the oven to 350 degrees.
  • Mix the dry ingredients together (flours, salt, baking soda, sugar).
  • Stir in the oil, maple syrup, vanilla, cranberries and chocolate until well combined.
  • Add in just enough to moisten all of the dry ingredients (the dough should be very thick).
  • Roll the dough into eight balls and place them onto a parchment paper-lined baking sheet.
  • Press down on the top of each ball of dough to flatten a bit.
  • Bake 12-14 minutes until lightly golden.
  • After removing the baking sheet from the oven, press down on the top of each cookie lightly with a fork to flatten them a bit. This is compacts the cookie, giving it a chewy center and crisp edges.
  • Cool cookies and enjoy!
