⅔cupgreen onionssliced, divided (about 4 green onions)

3cupscooked riceor "riced" cauliflower or Jasmine brown rice
2largeeggslightly beaten
2tbspsoy saucelower sodium
2tbspsesame oil
Instructions
Heat a large nonstick skillet over medium-high heat. Add oil, and swirl to coat
Add chicken breast and cook until done, then add carrot and broccoli; stir-fry 3 minutes or until crisp-tender.
Add peas, 1/2 cup onions, garlic, and ginger. Stir-fry for 2 minutes or until onions are tender.
Add cooked rice or cauliflower rice; cook 3 minutes or until thoroughly heated, stirring occasionally.
Reduce heat to medium.
Push rice mixture to 1 side of the pan; add eggs to the opposite side of the pan.
Cook, without stirring, for 10 seconds.
Cook, stirring frequently, for 2 additional minutes, or until eggs are scrambled.
Stir in soy sauce, salt, and pepper.
Sprinkle with remaining onions.
Serve immediately.

NOTE: You can use Jasmine brown rice as a healthier alternative or cauliflower made into rice. See this video for creating your own "rice" from cauliflower.
