Not only these macaroons are addictive but they are GOOD for you. Adding quinoa will add lots of nutrients, that normally you wont find in the traditional recipe. You will be amazed how delicious these are.

Healthier Coconut Macaroons

Quinoa & coconut macaroons.

Ingredients

  • 6 egg whites
  • 1/2 cup honey you could use maple syrup if desire
  • 1 1/2 cup unsweetened shredded coconut
  • 1 cup cooked quinoa follow the cooking instructios from the box
  • 1/4 tbs salt

Instructions

  • Combine the egg whites and honey or syrup in a heatproof bowl.
  • Begin by tempering the eggs, which will create a nice crispy cookie exterior.
  • Place the bowl over a pot with boiling water inside and whisk the eggs and honey together until creamy and warm.
  • Test with your finger warm to the touch, tempered.
  • When the egg and honey or syrup mixture is warm to the touch, take the bowl off the heat and mix in coconut, quinoa and salt.
  • Preheat the oven to 375 degrees F and line a baking sheet with a non-stick baking mat or double parchment paper (the bottoms are sensitive and will burn easily).
  • Using an ice cream scoop or two spoons, scoop the coconut quinoa dough onto the baking sheet.
  • Bake for 12-14 minutes until the cookies are nice and golden brown.
  • Let them cool for at least 5-10 minutes or until completely cooled.
