It’s really simple to make these wraps. I do recommend staying away from things that have a high liquid content (like tomatoes, salad dressing, etc) as they can soak through the Nori and get quite messy. My trick to get them to stay together beautifully is a very light smear of hummus along the edge, it binds it all together when you wrap it up.

Veggie Nori Wrap Homemade Hummus

Ingredients

  • 2-3 tablespoon hummus
  • 1/2 each carrot shredded
  • 1 each cucumber seeded, julienned
  • 1 handful leafy greens (spinach, baby kale or arugula)
  • 1/2 each avocado sliced in thin, long pieces
  • 1 each Nori sheet
  • 2 tablespoons mayo Just Mayo-vegan mayonnaise
  • 1/2 teaspoon siracha
  • 1/2 teaspoon Nama Soyu or Organic Tamari
  • 1/2 teaspoon sesame oil

Instructions

  • Spread hummus over Nori (about 2 to 3 tablespoons), leaving about 1/4 inch off the corner empty. You don't want the Nori to get too mushy.
  • Pile it all in starting with the lettuce and one vegetable at a time, right in the corner near you and roll it up.
  • Slice wrap with very sharp knife and enjoy!
