green cabbage
thinly sliced

purple cabbage

grated

bell pepper, red
diced

thinly sliced apples
Dressing

apple cider vinegar
1/2

lemon

tablespoons
Dijon mustard

maple syrup
1/4

orange juice
Kosher or sea salt to taste

freshly ground black pepper

grapeseed oil
Instructions
Whisk all the ingredients for dressing, leave the grapeseed oil for the end, gently emulsifying it until you reach a creamy consistency.
In a large mixing bowl, combine cabbages, carrots, bell pepper, apples.
Squeeze the lemon juice over apples immediately to avoid oxidation. Add the remaining dressing. Serve immediately or refrigerate until ready to serve.
